I just got my Journeyman in the mail and I’m stumped on the plug of the touch probe. Is this supposed to fit inside the probe or is it a cover to the plug or something?

Yep. It fits in the hole on the side of the touch plate. Very snug so it won’t accidentally come out
Push it in hard! The tip expands and contracts!

It’s known as a Banana plug. Very common on electrical and electronics test equipment.
Hey Alex,
That plugs into either side (see the hole in your picture) and holds itself in. It will not go all the way into the hole but mine has never slipped out nor have I heard of anyone else having an issue with it.
