Probing a live edge

Hey everyone, I’m probably overthinking this. But is there a good way to probe x,y,z on a live edge? Obviously the edges and carving surface are not straight (the carving surface is flat though). Im using Carveco software.

Do you really need to? Just use a centre origin instead of the bottom left corner (tell Carveco you want that), then manually find the centre of your board and set the origin to it. You can still use your probe for the Z offset if you want. Just remember to flip it over.

Create some stops or fence to align against for a best fit, then use something square to set your work coordinate and then add your piece of wood back onto the table locating on those stops.
